     Min's Egg Muffins

Ingredients
1 lb Sausage
2 C frozen Hashbrowns
3 Tbsp Flour
1 C Ranch Dressing (I use less and more Milk)
1/2 C Milk
Lrg Onion (I use Green Chilies)
1 C grated Cheddar Cheese
8 Eggs
 

Instructions
Saute Sausage and Onion. Drain & Cool Put in large mixing bowl, add Potatoes and Cheese (toss to mix) can be made a day ahead. Stir the Flour into mixture – add Eggs, Dressing and Milk. Put in greased muffin tins. Bake 15 to 20 min. or until set and golden brown. Freezes well. Makes 18 or so regular muffins. Bake at 325.
