     Confetti Rice

Ingredients
1 lb sliced Bacon, diced
2 C Long Grain Rice, cooked
2 C diced Carrots, parboiled
2 C diced Celery, parboiled
1 C fresh or frozen Peas
Soy sauce, optional
 

Instructions
In a large skillet, cook Bacon until crisp. Remove to paper towels; drain all but 1/3 C of the drippings. Add rice, carrots, celery and peas to the drippings; cook until heated through, about 5-7 minutes. Stir in Bacon. Serve with soy sauce, if desired.
