     Apricot Parfait

Ingredients
1 1/2 C crushed vanilla wafers
2/3 C toasted almonds (slivered almonds)
Half gallon Blue Bell Ice Cream
2 sm cartons real whipping cream (or Cool Whip)
1/3 C melted butter
1 tsp almond extract
20 oz jar of apricot preserves
 

Instructions
Mix wafers, butter, almonds and extract. Press into bottom of a 9 X 13 pan. Spread softened ice cream over wafers. (However thick you want it) Put in freezer until hard again. Spread the apricot preserves over ice cream. Put back in freezer until hard. Whip the 2 cartons of whipping cream. Spread on top of the apricot preserves. Cover tight and put back in freezer until ready to eat!
