     Turkey Tetrazzini

Ingredients
6 Tbsp Butter, divided
1 Tbsp Madeira (like Marsala)
1-1/2 C Chicken Stock
1/2 C Heavy Cream
1/2 lb Linguine, cooked al dente
1/3 C Parmesan Cheese mixed with 2 Tbsp Bread Crumbs
1/2 lb Mushrooms, sliced
4 Tbsp Flour
2-3 C Shredded Turkey
 
Salt & Pepper, to taste

Instructions
Heat 3 Tbsp Butter in skillet. Add Mushrooms & cooke 2 to 3 min. Then add Madeira. In another pan heat 3 Tbsp Butter for 1 min & stir in Flour. Whisk in the broth and bring to a boil. Cook over low heat 5 to 10 min or until thick. Remove sauce from heat and stir in Cream. Season to taste with salt and pepper. Stir in mushroom mixture. Preheat oven to 350 F. Spray a 2-qt casserole dish with Pam. Layer pasta and turkey with mushroom sauce. Sprinkle on Parmesan cheese mixture. Cook for 45 min to 1 hour until you get a nice color.
