1 pound beef eye of round steak, cut into thin strips
3 Tbsp. brown sugar
1 Tbsp. cornstarch
2 Tbsp. Canola oil, divided
2 Cups broccoli florets
1 Cup julienned carrots
1 Cup red, orange or yellow bell pepper strips
1 Cup chopped onion
1/2 Cup edamame
4 Cups hot cooked brown rice
Instructions
In a small bowl combine orange juice, teriyaki sauce, ginger,garlic powder, black pepper and red pepper flakes. Place beef in a large resealable bag or glass dish. Pour 1/2 Cup of orange juice marinade over beef and turn to coat well. Marinate in refrigerator 15 minutes or longer for extra flavor.
Add the brown sugar and cornstarch to the remaining marinade, stirring until smooth. Set aside. Heat 1 Tbsp. oil in wok on high heat. Remove beef from marinade, discarding marinade, and stir-fry 3-5 minutes until beef is no longer pink. Remove beef from wok. Add remaining Tbsp. of oil to wok and add broccoli, carrots, peppers, onion and edamame. Stir-fry 4-6 minutes until vegetables are crisp. Pour reserved marinade over vegetable mixture. Reduce heat to medium and, stirring constantly, bring sauce to a boil for one minute. Return beef to wok and heat through.
Prepare rice as directed without salt. Serve over rice. NOTE- Edamame is a soybean that can be found in frozen food section as bean or in pods. Remove from pod before adding to dish.
One serving is 1/4 cup stir-fry over 2/3 cup rice. 400 Calories, 10 grams fat, 25 gramd protein, 393 mg. sodium, 6 gm fiber.
