     Earthquake Chili

Ingredients
2-1/2 lbs. Pork Roast
1 lb. Ground Beef
44 oz. Whole Tomatoes canned
23 oz. Tomato Sauce
1 can Beer
1 can French Onion Soup
1 Beef Bouillon Cube
1 tbsp Garlic Powder
3 tbsp Chili Powder
 
1 tsp Cumin Powder
1 tbsp Sugar
1-1/2 tbsp Salt
1/4 to 1/2 tsp Tabasco
21 oz. Green Chilies (canned), diced
3-1/2 oz. Jalapeños (canned), sliced

Instructions
Cut Pork into 1/2-inch squares and brown with the Ground Beef over medium heat until meat is slightly dry. Drain grease
Coarsely chop Tomatoes, reserving liquid. Combine chopped Tomatoes with liquid, Tomato Sauce, Beef Bouillon Cube, Beer and French Onion Soup with the meat mixture. Bring to a rapid boil and continue boiling with the lid on for 20 minutes.
Add all the rest of the ingredients except the Tabasco and cook over low heat with the lid on for at least 1 hour - stirring occasionally. Remove lid and cook until it has the desired consistency. Taste and add Tabasco.
Note- e Chili should be made a day or two in advance so that it can season in the refrigerator. Chili can be refrigerated for 7 days or frozen for 3 months.Yields 3 Quarts
