1 C Hatch Green Chiles, roasted, peeled, and chopped
1 garlic clove, finely minced
Dash of Ground Cumin
8-12 tortillas
3/4 C Cheddar or Monterey Jack Cheese
2/3 C chopped Onion
1-1/2 C Chicken Broth
Salt to Taste
1 C Chicken, cooked/chop
1-2 Tbsp Oil
Instructions
Melt butter in saucepan over medium heat. Saute onion in butter until soft. Stir in flour and cook, stirring, until ingredients are thoroughly blended and flour has changed color. Add broth and stir until roux is completely blended into the liquid. Add chiles, salt, garlic, salt and cumin. Simmer for 20 minutes. Add chopped cooked chicken and heat until heated thoroughly.
Garnishes- sour cream, chopped lettuce and tomato wedges
