Combine olives, pimentos (with its juice), red onion, garlic, pepper,
oregano, and pickles. Use the heart and leaves from the stalk of
pascal celery and string it as you cut it into 1 inch pieces. Add to
mixture.
Salt to taste. Add red wine vinegar, T olive oil, mix well. Keep in a
covered container.
