     Veal piccata

Ingredients
4 veal cutlets (about 3/4 lb)
1/4 c flour
1/2 t salt
1/4 t pepper
1 1/2 t peanut or vegetable oil
3 T dry white wine
2 T butter
2 T lemon juice
2 t grated lemon rind
 

Instructions
Place cutlets between two sheets of plastic wrap; flatten to 1/8 inch thickness using meat mallet or rolling pin. Combine flour, salt, and pepper; dredge cutlets in flour mixture. Cook cutlets in oil in a skillet over medium heat 1 minute on each side. Remove from skillet and keep warm.
Add white wine to skillet; cook until thoroughly heated. Add butter and lemon juice; heat just until butter melts. Pour over cutlets, adn sprinkle with lemon rind.
