Ingredients
8 slices (1/2 inch thick) soft crust Italian bread
3 T olive oil
2 t chopped fresh garlic
4 Roma tomatoes cut into wedges and chopped
1/4 c fresh chopped basil
1 T finely chopped onions
1 T capers, drained and chopped
Pinch salt and pepper
Parmesan cheese wedge
 

Instructions
Place bread on parchment-lined baking sheet. In small skillet over low heat, combine olive oil and garlic; heat for 3-4 minutes. Lightly brush bread slices with oil mixture; set remaining mixture aside. toast in 425°F oven or under broiler until golden brown; set aside.
In small bowl, combine reserved oil mixture with remaining ingredients except parmesan; refrigerate.
Just before serving, divide tomato mixture among toasted bread slices. Shave parmesan cheese over tops. Serve immediately.
