     Tomato Orzo Chicken

Ingredients
1/3 C olive oil
1 lb. chicken breast
2 small zucchini, sliced
2 cloves garlic, minced
2 tbsp flour
1 tsp salt
1 28 oz can diced tomatoes, do not drain (fire-roasted are best)
1/2 C parmesan cheese
1 C chicken stock (optional - gives flavor and moisture)
 
1 package orzo

Instructions
Heat olive oil in skillet over medium high in large (deep) saute pan. Saute chicken until almost cooked through.
Remove chicken, cook zucchini and garlic. Add flour and salt, stir.
Add chicken and tomatoes, including juice. Cover and cook 30 minutes over low heat.
Serving Suggestions
Serve over orzo pasta, with parmesan cheese and sour cream, if desired.
