1/3 C olive oil
|
|
1 lb. chicken breast
|
|
2 small zucchini, sliced
|
|
2 cloves garlic, minced
|
|
2 tbsp flour
|
|
1 tsp salt
|

1 28 oz can diced tomatoes, do not drain (fire-roasted are best)
|
|
1/2 C parmesan cheese
|
|
1 C chicken stock (optional - gives flavor and moisture)
|

Instructions |
|
|
Heat olive oil in skillet over medium high in large
(deep) saute pan. Saute chicken until almost cooked
through.

Remove chicken, cook zucchini and garlic. Add flour
and salt, stir.
|
|
|
Add chicken and tomatoes, including juice. Cover
and cook 30 minutes over low heat.

Suggestions |
|
Serve over orzo pasta, with parmesan cheese and sour cream, if desired.
