     Brazilian Stovetop Pork Ribs

Ingredients
10 pork spareribs
1/2 c soy sauce
2-3 T crushed Garlic
1 T dried Rosemary
1 T Dried Oregano
2 Bay Leaves
1 Lime, juiced
7-10 Sprigs Fresh Parsley
ground Black Pepper to taste
 
2 Limes cut into wedges

Instructions
Place spareribs into a lg pot and fill w/ just water till just covered. Add next 6 items and 3/4 of the parsley. Bring to a boil, then simmer on med high till water evaporates about 25-30 min.
When the water is all gone, remove bay leaves and allow meat to brown turning occasionally. Use spatula to scrape up brown bits and garlic, toss with pork.
Remove from pan to paper towels to drain season w/ pepper and garnish with lime wedges and remaining chopped parsley.
Notes- If need to brown under Broiler about 5 min per side. Total time 1-1-1/4 hrs
Serving Suggestions
Serve w/ rice and a green salad salad
