     Italian Cream Cake

Ingredients
2 c. Sugar
1/2 C Butter or Margarine (1 stick)
1/2 C Shortening
5 Eggs, separated
2 C Flour, sifted
1 C Pecans
1 tsp. Baking Soda
1/2 tsp. Salt
1 C Buttermilk
 
1 tsp. Vanilla
1 C Angel Flake Coconut

Instructions
Separate eggs and beat whites. Set aside. In large bowl, beat sugar, margarine, and shortening. Add yolks –one at a time. Beat well. Add sifted dry ingredients with buttermilk and vanilla. Fold in egg whites, coconut and chopped pecans. Bake in (3) nine-inch, greased and floured, pans at 350 degrees for 25 minutes.
