     Double Chocolate Mint Cookies

Ingredients
1 pck. Creme de Menthe Andes Candies, chopped
1 1/4 c. flour
3/4 teas. baking soda
1/2 teas. salt
1/2 c. butter, softened
1/2 c. brown sugar,packed
1/4 c. sugar
1/2 teas. vanilla
1 egg
 
1/2 c. chopped nuts

Instructions
Preheat oven to 375. Melt 1/2 chocolate in double boiler until smooth. Cool to room temperature.
Combine flour, baking soda, and salt. Beat butter,brown sugar, sugar and vanilla until creamy. Add chocolate and egg; beat well. Blend in flour mixture. Stir in remaining chocolate and nuts.
Drop by rounded tablespoonfuls onto ungreased cookie sheet.
Bake at 375 for 8 to 9 minutes. Allow to stand 2 to 3 minutes before removing from cookie sheets. Cool.
