     Hoi An-style Over-crisped Pork Sandwich

Ingredients
1 t Chinese Five Spice
1 T salad oil
1/4 chopped shallots
1 garlic clove minced
12 oz. ground lean pork
3 T soy sauce
1-1/2 t sugar
salt
3 baguettes
 
2 T asian red chili paste
8 oz thinly sliced roast boned pork loin-cooked
2 C thinly sliced English cucumbers
3 C salad mix
1/2 C fresh Thai or regular basil
1/2 C fried shallots

Instructions
In an 8-10 inch fry pan over medium heat stir 5 spice until fragrant, abt 30 seconds. Stir in oil, shallots and garlic. Add ground pork, stir often breaking apart until crumbly and no longer pink, abt 15 minutes. Add soy sauce, sugar and salt to taste.
Cut baguettes in half then split lengthwise almost all the way through leaving halves attached. Spread 1 t chili paste on one side. Spoon about 1/6th warm pork mixture including juices over chili paste. Tuck 1/6th of the pork slices evenly into each sandwich. Set sandwiches slightly apart on 12 x 15 inches baking sheet.
Bake 375 degrees just until filing is warm and crust is crisp, abt 5 min. Remove from oven and fill each with 1/6th cucumbers, salad mix, basil and fried shallots. Add more chili past and salt to taste
