     Fettuccine w/ Creamy Tomato Italian Sausage Sauce

Ingredients
2 tbsp olive oil
3 shallots, chopped
2 large garlic cloves, chopped
1/2 lb sweet Italian sausage, casings removed
1/2 lb spicy or hot Italian sausage, casings removed
1 cup whipping cream (or light cream)
2 - 14.5 oz cans diced tomatoes in juice
1 tbsp dried sage or 2 tbsp fresh - 1/4 tsp rubbed sage
3/4 lb fettucine
 
1/2 cup grated Parmesan cheese

Instructions
Heat oil in heavy large pot over medium heat. Add shallots and garlic and saute until beginning to soften (about 3 minutes). Add sausages and saute until nolonger pink breaking up the sausage (about 5 minutes or more). Add cream and simmer for 5 minutes. Add tomatoes with the juices. Add sage. Simmer until sauce thickens, stirring occassionally (about 15 minutes).
Meanwhile, cook pasta in a large pot of boiling salted warer until just tender, but still firm to bite. Drain pasta reserving 1/2 c of cooking liquid.
Return pasta to same pot and add sauce. Toss over medium heat until sauce coats pasts adding reserved liquid if necessary. Seasn with salt and pepper. Transfer to a bowl and sprinkle with cheese.

serve with salad and crusty bread
