     Cranberry Bread

Ingredients
2 cups flour
1/2 teaspoon baking soda
1 1/2 teaspoon baking powder
2 tablespoons hot water
1 cup sugar
1/2 cup orange juice
1/2 cup chopped nuts (optional)
1/2 teaspoon salt
1 egg, beaten
 
2 tablespoons melted shortening
1 cup whole cranberries

Instructions
Mix dry ingredients together, add egg, juice, water, and shortening (make sure melted shortening is not too hot before adding to egg mixture). Stir to mix. Mixture will be thick. If too thick, add a little more orange juice. Fold in nuts and berries. Place into loaf pan (sprayed with Pam).
Bake at 325 degrees for about 1 hr and 10 minutes.
