     Shepherds Pie

Ingredients
1 tsp olive oil
1 small onion diced
1 1/2 pounds ground sirloin
2 cups frozen mixed vegetables
3 tbls tomato paste
1/2 tsp salt
1/4 tsp black pepper
1 (14 oz) can fat free less sodium beef broth
2 tbls all purpose flour
 
Cooking spray
1 (20 oz) pkg refrigerated mashed potatoes or left overs

Instructions
Preheat oven to 375
Heat oil in a large skillet over medium high heat. Add onions, saute 5 mins. Add beef, and cook until beef is brown stirring to crumble. Drain
Return beef mixture to pan. Add mixed veges and next 3 ingredients, cook over medium heat 5 mins or until veges are hot, stirring frequently. Combine broth and flour stirring with a whisk.
Add broth mix to beef mix. Bring to a boil and cook 3 minutes or until thick stirring constantly. Spoon beef mixture into an 11x8 inch baking dish coated with cooking spray. Spread potatoes over meat mixture. Bake at 375 for 20 minutes.
