Preheat oven to 400 F. Melt butter in medium saucepan on medium heat. Add zucchini and onion; cook 2 minutes and stir 2 minutes or until tender. Remove from heat. Stir in stuffing and cheese until well blended.
Carefully insert fingers between meat and skin on each quarter to form pocket. Fill pockets evenly with stuffing mix. Place skin sides up in a large roasting pan.
Bake 45 minutes or until chicken is cooked through. Brush with bbq sauce. Bake an additional 5-10 minutes or until heated through.
