     6 Week Bran Muffins

Ingredients
2 cups of Fiber One Cereal
2 cups of boiling water
1 cup of Crisco (2 sticks)
2 cups of sugar (half white and half brown)
4 eggs
1 quart of buttermilk
2 cups of raisins (1 large box)
2 cups of chopped toasted pecans
2 cups of chopped dates
 
5 cups of sifted flour
1 teaspoon of salt
5 teaspoons of baking soda
4 cups All Bran Cereal (not the flakes)
2 teaspoonsof cinnamon can be added for a cinnamony taste

Instructions
In a bowl soak the Fiber One Cereal in the boiling water for 10 minutes.
Meanwhile, in a large bowl, cream the sugar and Crisco. Add one egg at a time. Add Buttermilk raisins, dates, pecans and Fiber One Mixture.
In a second bowl, mix flour, salt and soda. Slowly add to mixture in large bowl, blending well. Fold in All Bran Cereal and mix well.
Store in tightly sealed container in refrigerator for 6 weeks. Bake at 375 degree oven in Pam sprayed muffin tins for 20-25 minutes, or until inserted toothpick comes out clean. Fill the muffin tins using a third cup because these do not rise much. Bake as many as you like and store the rest for 6 weeks.
Serving Suggestions
I've added apricots and cranberries also.
