     Caesar Salad Dressing

Ingredients
1 Clove Garlic minced
1/2 cup olive oil
1/4 tube anchovy paste
1 t. Worcestershire sauce
1/2 t. salt
1/4 t. mustard powder
Dash of black pepper
Juice of 2 lemons (or 2 T. lemon juice)
1/3 cup grated parmesan cheese
 
2 T. mayonnaise (or 1 raw egg)
1/2 cup shredded parmesan cheese
Garlic croutons
2 heads romaine lettuce hearts
Grape tomatoes (optional garnish)

Instructions
Add all of the dressing ingredients (with the exception of the shredded cheese and croutons) to the olive oil and mix well with a whisk. The mayonnaise is suggested as a substitute for raw egg if one is squeamish (which I am) about using raw egg. Dijon mustard works well as an alternative to the mustard powder.
Tear the lettuce into bite size pieces and toss with the dressing in a large salad bowl. Top the salad with the shredded parmesan cheese and if you like, grape tomatoes.
The croutons are best if provided as a side.
