     Chicken and Rice Soup

Ingredients
1 whole chicken
1-1 1/2 cups of uncooked rice
12 cups of water
1 onion, chopped
4-6 stalks of celery (with leafs on top)
3-4 carrots, chopped
1-2 bay leaves
1 tsp poultry seasoning
1-2 tsp garlic powder
 
salt and pepper to taste
saltine crackers

Instructions
Rinse 1 chicken and put in large pot. Add the 12 cups of water or more if you are making a large amount. Add remaining ingredients except for rice. Bring to a boil and simmer for 45 minutes on medium to medium low heat. Debone chicken and set aside.

Serve with saltine crackers. Variation- Make soup without rice. Make biscuits with Bisquick or canned biscuits. Drop dough by teaspoon into boiling soup (or cut rolled biscuits into strips). Cover and cook for 10-15 minutes for Chicken and Dumplings,
