     Poppy Seed Cake

Ingredients
1/4 cup poppy seed
1 cup buttermilk
2 sticks butter
1-1/3 cups sugar
4 eggs
1/2 tsp vanilla
1-1/2 tsp almond extract
2-1/2 cups plus 2 tbsp flour
1 tsp baking powder
 
1 tsp baking soda
1 tsp salt

Instructions
Soak poppy seeds in buttermilk for 15 minutes or more. Set aside.
Mix together and cream butter and sugar. Separate the eggs and add yolks to butter and sugar. Beat eggs whites until stiff. Add vanilla and almond extract and mix.
Add dry ingredients and the poppy seed mixture alternately to the creamed mixture. Fold in the stiffly beaten egg whites last. Grease a bundt pan with butter. Sprinkle a cinnamon/sugar mixture in the pan to lightly coat. Dot the bottom of pan with butter. Bake at 350 degrees approximately 35 minutes.
