     Salt and Pepper Chicken

Ingredients
Marinade
2 tablespoons of soy sauce
1 tablespoon of rice wine
3 garlic cloves minces
1 teaspoon of minced ginger
1 teaspoon of sesame oil
1 teaspoon of sugar
1 teaspoon of 5 spice powder
1/2 teaspoon of freshly grind pepper
 
Ingredients
3 chicken thighs
4 sprigs of basil
Tapioca or sweet potato powder
3 cups of oil

Instructions
Cut chicken thigh into chunks and mix into marinade. Marinade chicken overnight or 2 hours
In a zip lock bag, place chicken pieces into bag with tapioca powder and shake bag until pieces are covered
Heat oil up in a wok to 300 degrees, fry chicken for 2-3 minutes, remove them by placing it on plate with layers of paper towel and let it rest for 5-10 minutes
Turn heat up to high and re-fry chicken for 1 minute. Remove and spread mixed powder, place fried basil on top and serve chicken on parchment paper
