     OYSTERS SCALLOPED

Ingredients
1 1/2 dozen oysters
1tbsp butter
1tbsp flour
1c milk
Pepper and salt
1/8tsp nutmeg
Little lemon juice
Breadcrumbs
 

Instructions
Beard and drain oysters
Melt butter in a saucepan. Add flour, then gradually stir in milk.
Cook until it thickens, cook a few minutes longer. Season with pepper and salt, nutmeg and add alittle lemon juice
Add oysters to hot sauce and pour into pie dish. Cover with breadcrumbs and dot with flakes of butter. Brown under the griller or in a hot oven.
Serving Suggestions
Serve hot garnished with parsley. Crayfish may be done in the same way
