     Almond rice pudding

Ingredients
2 large eggs, beaten
1½ cups heavy cream
1 tablespoon butter, melted
¼ cup firmly packed light brown sugar
¼ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
1/8 teaspoon salt
½ teaspoon almond extract
2 cups cooked and cooled rice
 
1/3 cup sliced almonds, toasted
1/3 cup chopped dates

Instructions
Preheat oven to 325°. Lightly grease a 9-inch square baking dish with nonstick cooking spray. In a large bowl, add eggs, cream, and butter, stirring until combined. Add sugar, spices, salt, and almond extract, stirring until combined. Stir in rice, almonds, and dates.
Pour mixture into prepared baking dish. Bake for 50 minutes or until a knife inserted in the center comes out clean.
