     Bacon and Cheese Double Cornbread

Ingredients
1 pkg corn muffin mix
1 large egg
1/3 cup milk
1/2 cup frozen sweet corn
1/3 cup grated Parmesan cheese
1/2 cup shredded Cheddar cheese
6 strips bacon, thawed and chopped
 

Instructions
Preheat oven to 400 degrees. Line muffin tin with paper liners. Set aside.
Combine corn muffin mix, egg, milk, corn and Parmesan cheese. Mix well. Divide batter among prepared muffin cups to fill each half full.
Mix shredded Cheddar cheese and chopped bacon in a small bowl, and sprinkle evenly over the muffins.
Bake for 15-20 minutes or until a toothpick inserted into center comes out clean.
