.5 C onion

.5 C Peppers (red, yellow, orange, or green - I did some of 3)

Kosher salt and black pepper

2 cloves garlic

1 cup split pea
|
|
.5 cup of brown rice
|
|
1 t of Cumin
|
|
1 t of Coriander
|
|
.75 C bread crumbs

Stewed Tomatoes, spaghetti sauce (whichever or even vegetable broth)

Instructions |
|
|
Saute onions, peppers, garlic in olive oil. Add salt
and pepper. Add stewed tomatoes (broth, spaghetti
sauce), peas, rice and simmer.
|

|
Place mixture in food processor and just blend, not
puree. Pour into bowl and add bread crumbs. Refrigerate for 30 minutes.
|
|
|
Place in pan with olive oil and cook 3-4 minutes on
each side. Can also dredge in bread crumbs for a
crunchier burger.
