     Lamb Rack Appetizer

Ingredients
2 racks of lamb, cut into single chops
olive oil
1 tbsp cumin
1 tbsp ground coriander
1 tsp sweet paprika
1 tsp coarse sea salt
1 tsp cracked black pepper
1 small bunch of fresh mint
 

Instructions
1. Lay the chops in a single layer in a baking dish. 2. Mix cumin, coriander, paprika, salt and pepper together and sprinkle generously over the chops
3. Turn over and sprinkle the other side. 4. Drizzle with olive oil
5. Cook the chops 3 minutes on each side on a hot grill. 6. serve on platter and garnish with mint
