     Texas Caviar Virginia

Ingredients
1 - 15 oz can Green Pigeon Peas
1 - 15oz can Black Beans
1 - 15 oz can small white beans
1 - 8 oz jar sliced Jalapeno Peppers
1 - firm ripe tomato
2 - cloves garlic
1 - bunch scallions
1 - bunch cilantro
1 - bunch parsley
 
1 - tsp black pepper
1 - Tbsp oregano
1 - Tbsp Tabasco sauce
1 - Tbsp Worcestershire sauce
1/4 cup - Italian dressing

Instructions
Rinse beans & combine in a large bowl, stirring gently to mix. Slice the scallions thinly, green part only and place in a smaller bowl. Chop the tomato, garlic, cilantro, parsley & jalapenos, first removing seeds from the jalapenos and add to the small bowl stirring gently to mix. Add the combined ingredients from the small bowl to the bean mix. Sprinkle in the black pepper & oregano and stir.
In a measuring cup, combine the Italian dressing, Tabasco, Worcestershire sauce and if you like a little more kick, one teaspoon of juice from the jalapenos. Add this mixture to the bean mix, once again stirring gently.
For best combined flavor, refrigerate for at least 4 to 6 hours, preferably overnight in a covered container. The longer it sits, the better it gets however I have never witnessed it sitting for more than a couple of hours.
