     Turkey Chili

Ingredients
2 tbsp olive oil
1 large onion, chopped
5 garlic cloves
1 green bell pepper, chopped
1 1/2 lbs ground turkey
2 tbsp chili powder
1 tbsp ground cumin
1 12 oz bottle of beer
1 15 oz can kidney beans, drained and rinsed
 
2 28 oz cans diced tomatoes, with juices
3 tbsp tomato paste
2 tsp salt
1 tsp black pepper

Instructions
Heat oil in a dutch oven or large pot over medium heat. Add onion, garlic, and green pepper. Cook until onion is translucent, about 10 minutes. Add turkey, and cook until browned, about 7-10 minutes, using a wooden spoon to break up lumps. Add spices and stir. Add beer, and cook 10 more minutes. Add beans and tomatoes and cover. Reduce heat, and simmer for an hour.
Stir in tomato paste, salt, and pepper. Simmer uncovered for 20 additional minutes.
