mix shrim and 6 T cornstarch in large bowl to coat. mix remaining 4 t cornstart cnad 4 t water in small bowl to blend. Heat oil in havy skillet or wok over high heat. working in batches fry shrip until cooded throug and golden on both sides, aobut 3 min using slotted spoon, transfer cooked shrimp to plate. drain all but 1 tT oil from wok. heat oil over med-high heat. add garlic, sugar, cayenne, and salt, stir constantly until garlic begins to brown, 15 sec. Add toma sauce, vengegar, and sherry. stir cornstarch-water mixture if spearated and add to sauce. cook until suce boils and thickens, stirring constantly aobut 1 minutes. add reserved shrim to sauce and toass to coat. rmeove from heat add onions
