     Pulled-Pork Sandwiches

Ingredients
1/2 c spicy brown mustard
1/4 c honey
salt and pepper
1 T paprika
3 cloves garlic, minced
1 7-9 lb bone-in pork shoulder skin removed
10 crusty rolls
2 T butter
 
2 T olive oil
4 med onions, chopped
kosher salt and pepper
8 cloves garlic, mincec
1t paprika
1/2 c brown sugar
1 C apricot preserves
1 C ketchup
2 t hot chili sauce - 2 t apple cider vinegar

Instructions
prepare the pork; combine the mustard, honey, salt pepper paprika and garlic in a bowl. prick the pork on all sides w/ a paring knofe about 1/2 in deep. brucsh all over with the mixture. tightly wrap w/ plastic and refrigerate 6 hr
unwrap the pork, place in a roasting pan and bring to room tem. preheat overn 250. transfer the pork oto the oven and pour 1 in hot water into the pan. cook 3 hr adding water as needed to maintain 1 in. remove the pan from the oven, add water if needed and cover tightly w/ foil. return to the oven and cook 6 more hours. turn of the oven and let the pork rest inside, about 1 hour.
sauce. melt the butter w/ the oil in a large skillet over med heat. add the onions, season w/ salt and pepper and cook, stiring occasionally, until tender, 6-8,om/ add tje gar;oc amd[a[rola amd cppl 2 tp 3 ,pre ,om/ stor om tje brpwm sigar. [reserves. letchip and chili sauce, stirring after ea addition. bring to a smi,mmer, then stir in the viengar. add salt to taste. shred meat and toss w/ sauce. serve.
