cook rice. keep warm. Toss chicken w/ cornstarch and fish sauce. Heat 1T oil in a large nonstick skillet over MH heat. Add chicken to pan; saute 5 min. remove chicken from pan. heat remaining 1t oil in pan. add onion, garlick and ginger to pan; suate 1 min. return chicken to pan; cook 1 min or until done. stir in coconut milk, chici sauce, sugar, and jice; cook 45 sec or until thourouhly heated. sprinkle ea servinge w/ colatro. serve chicken mixture over rice w/ lime wedges.
