     Salmon Marinade

Ingredients
1 salmon filet
1/3 C. orange juice
1/3 C. soy sauce
2 Tbls. snipped parsley
2 Tbls. cooking oil
1 clove garlic (crushed)
1/2 Tsp. dried basil (crushed)
 

Instructions
Thaw fish and place in shallow pan.
Combine OJ, soy sauce, parsley, oil, garlic, and basil. Dump marinade over salmon filet and let stand at room temp for 2 hours or 4-6 hours in fridge. Baste filet occasionally.
Drain and reserve marinade. Either place filet over coals or in a pan to bake (preheat oven to 375 and bake approx 20 mins). Cook until flaky, basting occasionally.
Heat remaining marinade to boiling and drizzle over fish before serving.
Serving Suggestions
Great with citrus jasmine rice. Also good served cold on top of salad.
