2 large Idaho russet potatoes, baked

1/4 cup butter spread
|
|
4 slices of bacon, cooked and crumbled
|
|
1/2 cup shredded cheddar cheese
|

Instructions |

|
Cut potatoes in half lengthwise. Carefully scoop out potatoe pulp leaving a quarter inch shell. Place shell aside.

|
Beat potato pulp and spread in large bowl with mixer at medium speed till smooth. Mix in half the cheese and butter.
|
|
|
Spoon mixture into potatoe shell, put bacon crumbles and cheese on top, and place on baking sheet.
|
|
|
Bake at 375 degrees for 10-15 min or untill cheese is melted.
