     Crockpot Santa Fe Chicken

Ingredients
1 1/2 lbs. boneless skinless chicken breasts
14.4 oz. can diced tomatoes with green chilis
15 oz. can black beans
8 oz. frozen corn
14.4 oz. can fat free chicken broth
3 chopped scallions
1 tsp. garlic powder
1 tsp. onion powder
1 tsp. cumin
 
1 tsp. cayenne pepper (or amt. to taste)
salt to taste

Instructions
Combine all ingredients, except chicken, in crockpot.
Season chicken with salt and lay on top.
Cook 10 hrs. on low or 6 hrs.on high. Remove chicken and shred.
Serving Suggestions
Serve over rice. Top with chopped scallions, sour cream, shredded cheddar cheese, and fresh cilantro.
