1/4 cup plus 2 tbsp shredded reduced-fat Cheddar cheese
1/4 lb lean ground turkey
1/2 cup canned condensed reduced-fat reduced-sodium cream of mushroom soup
3/4 cup frozen mixed vegetables
Instructions
Heat oven to 400 degrees. Spray 8 x 4-inch loaf pan with cooking spray. In small bowl, stir together Bisquick mix, water, egg, and 1/4 cup cheese; spread in pan.
In a 10-inch skillet, cook turkey over medium-high heat, stirring occasionally, until brown; drain. Stir in soup and vegetables; heat until hot.
Spoon turkey mixture over batter in pan. Sprinkle with remaining 2 tablespoons cheese. Bake about 20 minutes or until edges are light golden brown.
