Shred carrots. I generally use a peeler for one carrot then chop, and then shred rest to give some shape/texture differences.
Add raisins, sea salt, and ginger. Toss/mix.
Add mayo, white wine, and allspice to bowl. Whisk until thoroughly mixed. Add to carrots/raisins. Mix thoroughly (I use my hands, as it seems to make sure everything mixes well).
Add black pepper, mix, and serve.
