Boil the adzuki beans according to the instructions
on the packet.
Gently fry the onion and carrot in a little water,
then add the quinoa(dry), chicken thighs and cooked
adzuki beans. Cover with water and simmer until the
quinoa and chicken is cooked and the water
evaporated.
Stir in the creme fraiche and serve with bread and
vegetables.
