     Chickpea Quinoa Salad

Ingredients
1 16 oz cans chickpeas, heated in juice
1/2 cup cooked quinoa (following directions on package)
1/2 cup celery, finely chopped (approx 2 stalks)
1/2 cup shallots, finely chopped (approx 2-3 shallots)
1 cup cucumber, diced (approx 1 small cucumber)
1 medium firm avocado, diced
1/2 cup raw pumpkin seeds
1/2 cup raw unsweetened coconut flakes
1/2 cup unsweetened dried cranberries
 
1/2 tsp cumin
For Dressing-
2 tbsp olive oil
2 tbsp apple cider vinegar
1/2 tsp sea salt
2 tsp honey (optional)

Instructions
Cook quinoa. Heat chickpeas in juice. Drain and rinse chickpeas.
Add quinoa, chickpeas, and remaining ingredients into large mixing bowl. Stir.
Whisk together dressing ingredients. Pour over salad mixture and toss well.
Options- Keep quinoa separate and serve salad over bed of quinoa.
