     Sarah Moore's Italian Cream Cake

Servings   3 layer round cake

Ingredients
2 Cups Sugar
2 Cups Flour
1 tsp Baking Soda
1 tsp Vanilla
1 stick Butter
5 Eggs, separated
1-1/2 Cups Nuts (see note)
1/2 Cup Shortening
1 Cup Buttermilk
 
1 Cup Coconut
FILLING AND ICING-
8oz Cream Cheese
1-1/2 Cup Nuts (see note)
1 stick Butter
1 tsp Vanilla
1 box Powdered Sugar

Instructions
Cream butter, sugar and shortening. Add egg yolks, buttermilk, flour mixed with soda. Mix well. Add nuts and vanilla. Fold in egg whites, which have been stiffly beaten. Add coconut. Place in THREE (3) round cake pans. Bake at 325 degrees for 25 minutes.
Mix filling well, spread onto cooled cake.
(NOTE) Optional- I like to use slivered almonds in the cake batter, chopped walnuts in the icing and after it is iced decorate the top with pecan halves.
