     Mountain Corn Cakes

Ingredients
1 (7 0z) package of corn bread mix
1 tablespoon powdered egg
2 tablespoons powdered milk
1/3 cup water
1 tablespoon butter, margarine, or oil
 

Instructions
Mix dry ingredients, add water and knead.
Melt butter in pan or skillet over a very low flame.
Place large, heaping spoonfuls of the batter in your pan or skillet. The batter will spread some, so leave a little room between each or cook one at a time. When bubbles appear all over the surface, carefully flip cake onto the uncooked side.
Cook another 30 to 40 seconds or until cake sounds hollow when lightly tapped.
