     Potato and Vegetable Chowder

Ingredients
5 chicken boullion cubes
5 cups cold water
1/2 cup chopped onion
1 cup chopped carrots
1 cup chopped celery
3 cups diced potatoes
1 bundle broccoli (chopped)
3/4 cup margarine
3/4 cup flour
 
4 cups milk (or 2 cups milk and 2 cups half & half)
8 oz Velveeta cheese (cubed)

Instructions
Cook first seven ingredients in large pot on stovetop until tender (on medium heat, approximately 20-30 minutes).
In separate pan, melt margarine. Then stir in flour slowly, until smooth. Add milk. Add Velveeta cheese. Cover and turn off heat (cheese will melt). Then stir.
Add cheese mixture to veggie mixture (do not drain water from vegetables). It's ready.
Serving Suggestions
Pour into bread bowls if desired and enjoy!
