     Spanish Rice

Ingredients
2 tbsp olive oil
1 cup long grain white rice
2 cups water
3 chicken flavored bouillon cubes
1 green or red bell pepper (chopped)
1 medium onion (chopped)
8 oz package of frozen sweet peas (optional)
8 oz can of tomato sauce
16 oz can whole can tomatoes, chopped or sliced in can
 
1 tsp salt
1 tsp black pepper
1 1/2 tsp cumin
1 1/2 tsp coriander (optional)
1 tsp. garlic powder

Instructions
In med saucepan heat oil; add rice and saute 5-7 minutes or until bornw. Pay close attention or rice can burn. Add chopped onion and saute 5-7 minutes.
In saucepan, boil water and add bouillon cubes. Stir to dissolve. Add to rice.
Add remaining ingredients; stir and bring to a slow boil. Take your time using med to med high heat. Reduce to low heat after getting to slow boil stage.
Cover pan and cook for 14 minutes. Do not remove cover for 14 minutes. After 14 minutes, check to see if liquid has dissolved. Cook additional 2 minutes if liquid has not totally been absorbed by rice. Remove from heat and keep covered until serving.
