     Swedish Pea Soup

Ingredients
2 cups dried yellow peas
1 lb salt pork (They used bacon when I had it at the welcome reception)
1 onion, chopped
salt to taste
1/2 tsp. ground ginger
 

Instructions
Soak peas overnight in 2 11I quarts water.
Bring to a boil; reduce heat. Skim. Add salt pork and onion; simmer, covered, for 2 hours or until peas and salt pork are tender. Add salt, if needed. Stir in ginger and additional water, if necessary. Remove salt pork; slice. Serve separately with mustard, if desired.
