     Tuna Casserole

Ingredients
8 ounces egg noodles
1/2 cup diced sweet onion
1 tbsp butter
1 can cream of mushroom soup
1/2 cup milk
1/2 tsp salt
1 tsp black pepper
1/2 cup frozen peas, thawed
1 cups chopped broccoli thawed (optional)
 
1 cans tuna, drained
1 cup shredded Cheddar cheese (divided)
1 cup bread crumbs

Instructions
Preheat oven to 400 degrees F. Spray a glass casserole dish with cooking oil. Cook egg noodles to al dente in boiling water; drain well.
In a large saucepan, saute onion in the butter until they are barely soft, but not mushy. Add mushroom soup, milk, salt and pepper . Stir over low heat until smooth and thickened, stirring to dissolve soup. Add broccoli and peas and cook 2-3 min on low heat.
Add cooked pasta noodles, half the cheese, and tuna and toss.
Top with remaining cheese then bread crumbs. Bake 35 minutes or until heated through and topping is lightly browned.
