     Crock Pot Potatoe Soup

Ingredients
32 oz fresh Broccoli, Chopped
1/2 cup Spanish onion, chopped
1/4 cup Chopped Green Bell Peppers
1 Large Carrot, Sliced
2 cups Chicken Broth (canned)
1-1/2 cup milk
3 cups diced partially peeled red potatoes
1/4 cup Canola Oil
1/4 cup flour
 
1 Garlic clove, minced
Parsley
1/4 tsp pepper
pinch of Basil
1-4 oz Shredded Colby Jack Cheese

Instructions
In a crock pot put broccoli, onion, peppers, and carrots and broth. Set on high for 1-2 hours. Whisk roux into 3 cups HOT water and add to crock pot. Stir well to mix all ingredients together. Switch setting to 4 hours on low. Just before serving add cheese and stir gently until melted.
Make Blond roux by cooking flour and oil together until just turning color. Whisk roux into 3 cups HOT water and add to crock pot.
Add milk, potatoes, and spices to crock pot. Switch to low and let cook for 4 hours.
Just before serving add cheese and stir gently until melted.
