     Squash Caserole

Ingredients
3 Zucchini diced
3 yellow squash diced
1/12 cups of yellow onion chopped
1 box Jiffy Corn muffin mix
3/4 cup of butter
8 oz of chedder cheese
3 chicken bouillon cubes
1 teaspoon garlic, minced
1 teaspoon salt
 
1/2 teaspoon pepper
1/2 teaspoon thyme
1 tablespoon parsley chopped

Instructions
Prepare Jiffy mix as directed and set aside
Place zucchini & squash in large sauce pan with just enough water to cover cook on med low heat until a little tender remove from heat
Drain reserving one cup for later Saute onions in the butter until clear add salt, pepper, thyme & parsley Add chicken bouillons & garlic to onions stir, then add squash and diced cheese stir Crumble corn bread in the corn bread and pour in the reserved cup of water mix well Place sqush/zucchini mixture into 13x11baking pan sprayed with Pam Cover casserole & place in preheated 350 oven for 60 minutes removing the cover for the last 20 minutes-9
