Mix crab meat, cream cheese and scallions. Lay a
wonton wrapper so the points are facing north,
south, east and west. Place teaspoon of filling in
middle of wonton. Fold north point to south. Seal
edges with fingers dipped in water. Pull east and
west points to north to shape. Fry in oil turning
once until light golden brown. Drain on paper
towel.
To reheat, place on racks on cookie sheets. Bake
at 350 degrees for 10 minutes. Serve with duck
sauce or ginger soy sauce.
